Recipe of the Week: Sausage Sandwich
Sunday mornings are for lazy lying around and eating fried pork of some variety. This weekend, make yourself and your family a tasty sausage breakfast sandwich, elevated with some of the gourmet grocery products you can find in store!
Breakfast Sausage Sandwich
Serves 4
Ingredients:
4 tbsp butter, divided
2 large onions, peeled and sliced into strips
1 tsp balsamic vinegar
8 links breakfast sausages, casings removed with a sharp knife
8 slices Five Brothers Firm Cheese
4 English muffins, halved
4 tbsp Branston Pickle
Method:
1. Melt one tbsp of butter in a medium pan over medium heat. Add the sliced onions, stir well, and cover. Cook the onions, stirring frequently, until they are caramelized, about 30 minutes. Stir in the balsamic vinegar, season with salt and pepper, and set aside.
2. Divide the sausage meat into 4 even balls. Heat a large cast iron pan over a high heat. When hot, add the four balls of sausage meat and press down with the flat side of a large spatula to make a patty about a ¼ inch thick. Sear until the sausage forms a crust on the bottom, then flip the patties. Add one tbsp of butter to the pan to add flavour to the sausage patties. When crusted on the bottom side remove the patties to a plate, then place two cheese slices on each patty, letting the warmth of the patty slightly melt the cheese.
3. Add another 2 tbsp of butter to the cast iron pan and reduce the heat to medium. When frothy, cook the English muffin in the butter, cut side down, until the cut side is golden – about two minutes. Set the toasted muffins aside and repeat with the remaining muffins until they are all toasted.
4. To assemble the sandwich, add a tbsp of Branston pickle on one side of the muffin. Top it with the sausage patty and cheese, then add a quarter of the caramalized onions on top of that. Finally, close the sandwich with a second toasted English muffin. Repeat with all of the muffins and serve!
