Recipe of the Week: Slow Roasted Pork Butt

Slow-Roasted Pork Butt

This is a very simple and delicious recipe for pork butt, and you only need three ingredients (all found at the shop), plus a splash of oil.

Yield: Serves 8 to 10

Ingredients:

6 lbs                      pork butt, skinless and boneless
4 tbsp                   Smoky Pork Seasoning
2 tbsp                   vegetable oil
1 cup                    The Big Smoke BBQ Sauce

Method:

1.  Rub the pork butt with the Smoky Pork Seasoning until it’s completely covered. Rest uncovered in the fridge for at least 6 hours, preferably overnight.

2. In the morning, preheat the oven to 275°F. Place the pork butt on an elevated roasted rack and rub it with the oil before placing it in the hot oven to slowly cook for about 6-8 hours, or until the internal temperature reaches about 175°F. Take the pork out and wrap it in tin foil - this will help it steam and break down the tough muscles. Put the pork back in the oven for another 1.5 to 2 hours, or until the internal temperature is 205°F.

3. Take the pork out of the oven and unwrap it. Turn the oven temperature up to 350°F. Baste the pork with the BBQ Sauce and put back in the oven to caramelize. After ten minutes, brush more sauce on the pork and allow it to caramelize, about 20 minutes altogether.

4. Remove the pork from the oven. Now it is ready to pull apart and load up on a bun, or next to a fresh salad. Any way you pull it, this pork is going to be tasty!
