Once described as a spice sprinkled from angel’s wings, fennel pollen is a chef’s favorite for it’s delicious licorice notes. The tiny seeds from the wild fennel plant are harvested and dried, and a small pinch can be used to flavour everything from pork and chicken, to salmon and potatoes.
