La Catedral de Navarra: "DOP" Piquillo Peppers

These sweet peppers, grown in northern Spain near the town of Lodosa, are hand-picked at their peak ripeness near the end of summer. The peppers are roasted, peeled, and seasoned before being preserved. They are fabulous as a tapas, either eaten as is, or stuffed with soft cheese.
