Yuzu Kosho

Yuzu kosho paste is a Japanese condiment made from fermented green chilies and the zest and juice of yuzu, a tart and fragrant citrus fruit that grows in East-Asia. This particular yuzu kosho is made in small batches by a company in Japan, and it explodes with spice, acidity, and umami. A little goes a long way.  Ideally paired with any meat dish, such as grilled pork or chicken.
