40+ Day Dry-Aged Côte de Boeuf

We take the most marbled rib sections from our select group of Ontario farmers, then dry age them in a specially made, climate controlled cooler for a minimum of 40 days. The result is very tender beef with a slightly cheesy flavour, and a distinct "popcorn" aroma. A true gourmet delicacy, best when shared with a good friend and a bottle of wine.

***Please note that the côte de boeuf will have a short bone as of October 1st.***
