Giuseppe Giusti: Agrodolce Bianco (White Balsamic Vinegar)

The Giusti house is the oldest balsamic producer in Italy, having made the aged vinegar since 1605 in Modena. This balsamic is aged for 8 years in centuries-old barrels for a complex and robust flavour, and has protected status under EU law.

Also known as “white balsamic”, this vinegar, made from the juice of lightly pressed Trebbiano grapes, has a sweet and sour element that is quite lovely in salads, or drizzled on roasts.
