Ortalli Balsamic Vinegars of Modena have IGP (Indication Géographique Protégée) status, in that they are produced in the Modena to the required standards. The primary difference between the IGP and DOP (Denominazione d'Origine Protetta) status of vinegars is the age: this balsamic has not been aged for as long as traditional balsamic, but the finished product is sweet and syrupy, with a soft acidity that makes it excellent drizzled on grilled meat, fruit, and even desserts.
